Healthy Banana Oatmeal Pancakes

 

Pancakes! It's easy to make, it's delicious, it doesn't take long and the good news is it can be healthy too! For this recipe, we'll use the old-fashioned oat as a replacement for standard flour, oh did I mention that it only has about 250 calories?

Ingredients

  • 1/3 Cup Old Fashioned Oatmeal
  • 1 Egg
  • 1 Ripe Banana
  • 1/2 tsp Baking Powder
  • 1 tsp Vanilla Extract (optional)
  • Maple Syrup (optional)

How to Make

  1. Combine all the ingredients and blend until smooth in blender or food processor.
  2. Set the heat to medium low, and melt a small piece of butter.
  3. Drop spoonfuls of batter into your pan.
  4. When you see bubbles, and the sides look set, flip over
  5. Top the pancakes with maple syrup, or berries.
